Homemade Winter Wonderland Chili

Take away the chill of winter with a bowl of steaming hot Homemade Winter Wonderland Chili from scratch. Serve it up spicy with side garnishes so that your guests can add in what they like. Remember, not everyone likes the same thing – but most people love a bowl of chili. So, be sure to have garnishes on the side

Ingredients

  • 1 lb Pinto Beans
  • ¼ cup Corn Oil
  • 3 ½ lbs Plum Tomatoes
  • 2 ½ lbs Yellow Onions
  • 10 Cloves Garlic
  • 4 Whole Mulato Chiles
  • 1 Can Beef Broth
  • 1 cup Water
  • 1 tsp Salt
  • 5 lbs Ground Chuck
  • 1 tsp Black Pepper
  • 3 Whole Ancho Chiles

Instructions

  1. Drain and rinse soaked beans. Place in a large saucepan with water that covers at least 2 inches. Bring to a boil. Reduce heat. Cover. Simmer until beans are tender. This is about 1 ½ hours. HINT: Beans can be prepared 1 or 2 days ahead of time. Let them cool, then cover and refrigerate them in their liquid.
  2. Heat 2 tablespoons of oil in a 12-inch skillet over medium heat. Add in tomatoes and cook until skins begin to char. This should be about 5 minutes. Cover the pan. Reduce heat to medium low. Continue to cook and turn until tomatoes are softened. Allow them to cool in a large bowl. When cool, peel and core tomatoes. Save tomato skin.
  3. Next, place 2/3rd onion quarters in skillet with 2 tablespoons of oil. Cover and cook until charred and softened (approx. 12 to 15 minutes). Place in bowl to cool.
  4. Now, in same skillet, in 1 tablespoons oil, cook and turn garlic cloves and remaining onion. Peel garlic and onion when cool. Cut off and throw away roots and peels. Add tomato flesh to bowl with tomato. Transfer all the vegetables to the blender and puree until smooth. Do not fill more than halfway. This may take a couple of times to blend. Set aside in bowl.
  5. Tear chiles in half and throw away stems and seeds. In the same skillet, heat and toast the chiles in 2 tablespoons oil until smoky (approx. 3 minutes). Put chilies in blender.
  6. Boil broth and water. Pour over chiles. Let stand until chiles are pliable (approx. 5 minutes). Puree chiles and broth and stir in tomato mixture.
  7. Cook meat. Place in 7 quart Dutch oven.
  8. Stir in tomato mixture.
  9. Drain cooked beans and add to the pot with salt.
  10. Add in pepper.
  11. Bring chili to a boil. Reduce heat. Cover and simmer until sauce is thick (approx. 1 ½ hours).

  • Onions
  • Cilantro
  • Sour Cream
  • Tart Guacamole

Peppermint Hot Chocolate

Ingredients

  • 1 Part Stirring Chocolate Peppermint
  • 4 Parts Strong Black Coffee
  • 2 Parts Irish Whiskey

Instructions

Warm up the non-alcoholic ingredients only in a mug. Add in about 10% water to compensate for evaporation. Heat the ingredients on the stove or in the microwave until hot. Once the non-alcoholic ingredients are warm, mix in the alcohol!
