Bacon-Wrapped Pork Loin with Sage, Garlic, and Roasted New Potatoes

The following recipe serves up to 8 people.

Ingredients:

  • 1 3-4 pound boneless pork loin
  • 2 tablespoons chopped garlic
  • 2 tablespoons chopped sage
  • 3 tablespoons olive oil
  • 6-8 slices bacon
  • 2 pounds scrubbed red new potatoes, halved

Instructions:

  1. Preheat oven to 425 degrees. Rub the pork loin with 1 tablespoon of the olive oil. Season the pork loin with salt and pepper.
  2. Press most of the garlic and sage into the pork loin. Reserve 1 tablespoon for the potatoes.
  3. Wrap bacon slices around the pork loin. Tuck the ends in underneath pork loin.
  4. Mix potatoes with 2 tablespoons olive oil and the remaining sage and garlic.
  5. Place the pork loin in a roasting pan. Surround the pork loin with the potatoes.
  6. Put the pork loin and potatoes in the oven. Set timer for 30 minutes.
  7. After 30 minutes, stir up potatoes. Lower your heat to 325 degrees.
  8. Continue to roast. Stir potatoes every 15 minutes. Pork loin should be cooked in an hour and a half. Check to be sure the pork loin is completely cooked with a meat thermometer.

This is an easy, yet very delicious and elegant main course meal.
