Food and Drinks for New Years Day Brunch

The following is a great, day after the party, spread to have at your New Year’s Brunch. On the menu is Mini Blueberry Pancakes with Raspberry Drizzle, Mini Tomato Grilled Cheese Sandwiches, Avocado Egg Scramble and a Croissant Spread.

Mini Blueberry Pancakes

On a heated griddle, pick your favorite boxed pancake mix and add in some blueberries. Make the pancakes small. Fill a pastry back with a stick of butter and squeeze a tiny bit on top of each pancake. Arrange the mini pancakes in a platter and drizzle a mix of raspberry sauce and maple syrup along them. It will make for a very eye catching a appetizing display.

Mini Tomato Grilled Cheese Sandwiches

Use wheat bread with the crust cut off and use gruyere cheese. Thinly slice tomatoes and grill this melts on the griddle. Cut them into small triangles and lay them out on a platter or tiered platter. Include garlic mayonnaise, roasted tomato or red pepper spreads for your guests to enjoy with their mini melts.

Avocado Egg Scramble

This is a simple, but delicious way to make eggs and your guests will love it.

Before you begin, make sure you have chopped onions and avocado chopped into ¼ inch pieces.

Whisk together cheddar cheese, eggs, salt and pepper into a bowl.

In a skillet, heat butter until the foam of the butter dwindles down. Then take your chopped onion and sauté it just until it begins to soften.

Add the egg mixture to the skillet and mix until eggs are scrambled.

Remove the skillet from the heat and add in the avocado.

An excellent touch to add is a bit of cilantro garnished at the top.

Croissant Spread

With all this beautiful food, should come a display of croissants, butter and any type of spread that strikes your fancy. Think hazelnut, butter, honey butter and jams.

Drinks

It is, after all, New Year’s Day. The celebrations must continue with champagne. Mimosas are the best drink for this type of brunch. Simply pour half orange juice and half champagne for a popular favorite to serve. Some of your guests may not wish to drink alcohol, so include a juice and water bar. Whatever your guests are drinking, serve it to them in a nice champagne glass so they too can feel part of the celebration. As with any type of breakfast food and morning after a party, there should always be a fresh brew of coffee and some hot water with tea bags. Those who need that little bit of a caffeine kick will love you for it. Don’t forget the cream and sugar!
