Kentucky Derby Party Foods and Drinks

Kentucky Derby Party Foods – Appetizers

Burgoo

This is a stew that is a tradition in Kentucky.  It is still served at the Keeneland Racetrack.   While there are many different ways to prepare Burgoo, this is the crock pot version.

Ingredients

  • 1 pound lean beef stew meat
  • 1 pound pork stew meat or chops, cut in 1" pieces
  • 1 teaspoon onion salt
  • ½ teaspoon black pepper
  • ¼ teaspoon ground red bell peppers
  • 3 sliced carrots
  • 1 medium onion, chopped
  • 4 skinned chicken thighs
  • 4 small red potatoes, peeled if desired and cubed
  • 1 cup chopped green bell peppers
  • 1 can (14 ½ oz.) stewed tomatoes, cut-up and juice reserved
  • 1 can (10 ½ oz) double strength chicken broth (such as Campbell's condensed)
  • 1 can (17 oz.) whole kernel corn
  • 1 can (17 oz.) lima beans, drained
  • 1 shot of Bourbon

Instructions

  1. Put the beef and pork into a 6 quart slow cooker.  Sprinkle with onion salt, pepper, and red pepper.  Toss in until evenly coated.
  2. Place the following ingredients in layers in the following order:  carrots, onion, chicken, potatoes, green pepper, and stewed tomatoes with juice.
  3. Add in chicken broth.
  4. Pour the liquid from the corn into the slow cooker.  Set corn aside.
  5. Important: DO NOT STIR MIXTURE AT THIS POINT.
  6. Cover and cook on high for 4 to 4 ½ hours or on low from 8 to 9 hours.  Be sure beef, pork, and vegetables are tender.
  7. Remove chicken.
  8. Stir in the corn and lima beans.  Cook mixture on high for 30 minutes or until it is heated through.
  9. While corn and lima beans are cooking, remove chicken from bones when it has cooled and cut into bite size pieces. Throw away bones.  Put chicken back into mixture and heat through.

Original Hot Brown

The Brown Hotel in Louisville, KY created the original Hot Brown in the early 1900s.  Chef Fred Schmidt was the creator of this traditional Kentucky Derby party food.  Hot Brown is toast topped with turkey, onion, cheese sauce, and crumbled bacon.  Delicious!

Ingredients

  • 4 oz. Butter
  • Flour to make a Roux (about 6 tablespoons)
  • 3 – 3 ½ cups Milk
  • 1 Beaten Egg
  • 6 tablespoons Grated Parmesan Cheese
  • 1 oz. Whipped Cream (optional)
  • Salt and Pepper to Taste
  • Slices of Roast Turkey
  • 8-12 Slices of Toast (may be trimmed)
  • Extra Parmesan for Topping
  • 8-12 Strips of Fried Bacon

Instructions

  1. Melt butter and enough flour to make a thick roux.  It should be enough to absorb all the butter.
  2. Add milk and Parmesan cheese.  Do not allow the sauce to boil.
  3. To thicken sauce, add egg.
  4. Remove from heat.  Fold in whipped cream.
  5. Add salt and pepper to taste.
  6. For each Hot Brown, put two slices of toast on a metal dish.  Cover with a lot of turkey.
  7. Pour sauce over turkey and toast.  Sprinkle with Parmesan cheese.
  8. Put the entire dish under a broiler until the sauce is speckled brown and bubbly.  Remove from broiler.
  9. Cross two pieces of bacon on the top.

Kentucky Derby Dogs

Ingredients

  • 1-2 packages of cold crescent roll dough
  • 1–2 packages mini 100% beef hot dogs

Instructions

  1. Unroll dough from package.
  2. Cut each triangular piece in half.
  3. Roll one mini dog in each piece of dough.
  4. Bake on cookie sheet for approximately 20 minutes.

 

Kentucky Derby Party Foods – Desserts

Kentucky Bourbon Fudge Pie

Ingredients

  • 1 prepared deep-dish pie shell, unbaked
  • ½ cup butter
  • 4 oz. Ghirardelli Semi-Sweet Chocolate
  • 2 tablespoons Bourbon
  • 6 tablespoons hot water
  • 1 – 14 oz. can of sweetened condensed milk
  • 2 large eggs, beaten
  • ½ teaspoon salt
  • 1 cup chopped or whole pecans

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Combine butter and chocolate in glass mixing bowl.  Microwave until melted.
  3. Add in Bourbon, hot water, condensed milk, and eggs.  Stir until smooth.
  4. Add in vanilla, salt, and pecans.  Mix well.
  5. Pour into the pie shell.  Bake pie for 45-55 minutes, or until the center is set.

Mint Julep Cake

Ingredients

  • 2 cups white sugar
  • 1 cup butter, room temperature
  • 3 cups cake flour
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • ½ cup sugar
  • ½ cup butter
  • ¼ cup bourbon
  • 1½ cups confectioners’ sugar
  • 1 tablespoon milk
  • 1 tablespoon white crème de menthe liqueur

Instructions

  1. Preheat oven to 325 degrees Fahrenheit.
  2. Coat 10 inch Bundt pan with cooking spray.
  3. Beat sugar and butter until light and fluffy.
  4. Whisk flour, salt, baking powder, and baking soda in a separate large bowl.
  5. Add in eggs to butter mixture. Add them in one at a time.  Mix well after each egg.
  6. Add in vanilla.
  7. Sprinkle half of the flour mixture into the butter mixture.  Stir.
  8. Add half of the buttermilk into butter mixture.  Stir.
  9. Repeat with remaining flour and buttermilk.
  10. Pour into prepared pan.  Smooth evenly around the center.
  11. Bake for 50 minutes or until toothpick inserted into center is clean.
  12. Cool.
  13. Combine ½ cup sugar, butter, and Bourbon in small saucepan.  Heat until butter is melted.  Stir until smooth and remove from heat.
  14. Use a skewer to poke holes into the cake.  Pour sauce over the cake evenly.  Allow cake to cool to room temperature before removing from pan.
  15. Whisk the sugar, milk, and crème de menthe until smooth.
  16. Add more milk or liqueur to the desired consistency.  Drizzle sauce over cooled cake.  Garnish with fresh mint leaves.

Kentucky Derby Party Drinks

Kentucky Mint Julep

The Kentucky Mint Julep is a traditional drink of the Kentucky Derby and has been served for hundreds of years.

Ingredients

  • 2 cups sugar
  • 2 cups water
  • Fresh mint
  • Crushed ice
  • Kentucky Bourbon

Instructions for Preparing Mint Syrup

  1. Boil sugar and water together for 5 minutes.  Allow to cool.
  2. Pour syrup over 6 – 8 mint sprigs that are bruised slightly.  This will release the taste.
  3. Refrigerate overnight in a covered container.

Instructions for Individual Mint Julep Drink

  1. Fill a julep silver cup with crushed ice.
  2. Add in one tablespoon of mint syrup and 2 ounces of Bourbon.
  3. Stir and garnish with mint sprig.

Mint Julep Mocktail

You will likely have guests that do not drink alcohol.  They can still be a part of the tradition with this mock up of the Kentucky Derby Mint Julep cocktail.

Ingredients

  • Syrup
  • Lemon juice
  • Mint leaves
  • Ginger Ale
  • Sprig of Mint

Instructions

  1. Put mint leaves in the bottom of a cocktail shaker.
  2. Add simple syrup and lemon juice to desired sweetness.
  3. Pour in mint mixture into a glass filled with crushed ice.
  4. Top with Ginger Ale and garnish with a sprig of mint.
