My friend's birthday happens to fall on Easter Sunday! So we're a bit confused on what we should do. We realized we are on a rare situation where we can have a lot of fun because of two events. Any tips on how we should make this work without overshadowing any of the celebration?

A simple message that says "Happy Birthday and Happy Easter" should be more than enough to remind everyone of the these special events. You can also add easter themed decorations. The food can still be on a birthday theme since the decoration have taken cared of reminding the visitors of this day.

I would suggest having two banners if you have the budget. But you really don't have to think about it too much. As long as you have food and a few games based on Easter, then everyone will have fun while remembering easter.
