Father’s Day Party Recipes

These Father’s Day party recipes are perfect for an outdoor cookout.  Fire up the grill and invite over some other dads for an ultimate grilled burger or tasty pork kabobs.  Add in some sides and desserts and you will have a feast for dads.

The Ultimate Burger

Ingredients:

  • 1½ pounds lean ground beef sirloin
  • ½ cup beer
  • 2 cloves garlic, grated or finely chopped
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon steak seasoning
  • 2 teaspoons Worcestershire sauce
  • 1 red onion, cut into 6 wedges
  • 1/3 cup chopped cilantro
  • Juice of 1 lime plus 1 teaspoon grated peel
  • Salt
  • 8 deli slices pepper jack cheese
  • 4 Kaiser rolls (cornmeal crusted, split and toasted)
  • Shredded romaine lettuce

Instructions:

  1. Combine beef, beer, garlic, chili powder, cumin, coriander, steak seasoning and Worcestershire sauce in a large bowl.  Shape into four patties.
  2. Preheat grill.
  3. Char vegetables for ten minutes and chop.  Transfer to a bowl.  Add in the cilantro, lime juice, and lime peel.  Season the pico de gallo with salt.
  4. Cook over medium-high heat for five minutes on each side for medium-rare burgers.  Cook longer for well done burgers.  Put cheese on the burgers about five minutes before they are to be done cooking.

Pork and Pineapple Kabobs

Ingredients:

  • One 20-ounce can of pineapple chunks in their juice, drained and juice reserved
  • 1 clove garlic, smashed
  • 2 tablespoons soy sauce
  • 2 tablespoons finely grated fresh ginger
  • 2 tablespoons vegetable oil
  • Salt and pepper
  • 1¼ pounds pork loin, cut into 1-inch cubes
  • 4 scallions, cut into 1-inch pieces
  • 1½ cups long-grain white rice

Instructions:

 

  1. Combine pineapple juice, garlic, soy sauce, ginger, and oil into a re-sealable plastic bag.  Season the mixture with salt and pepper.  Add in the pork and scallions.  Allow to marinate at room temperature for 30 minutes.
  2. Preheat the grill.
  3. In medium saucepan, boil 1¾ cups salted water to a boil.  Add in rice and cover.  Cook over low heat for 18 minutes.
  4. While rice is cooking, thread pork and two thirds of the pineapple chunks onto four 10 inch skewers.   Put the marinated scallions onto one 10-inch skewer.  Grill kabobs until golden brown and cooked through (approximately 10 to 12 minutes).
  5. Chop remaining pineapple and add into cooked rice.  Remove grilled scallions and stir into rice.
  6. Serve together for a delicious meal.

 

Grilled Corn and Parmesan Butter

Make sure you have plenty of corn because this side dish will go quick!

Ingredients:

  • 1 stick (4 ounces) butter, softened
  • ½ cup finely grated parmesan cheese
  • ½ teaspoon pepper
  • 6 ears corn, husked
  • 2 tablespoons extra-virgin olive oil

Instructions:

  1. Beat together butter, cheese, and pepper until creamy in a medium bowl.  Put onto a sheet of plastic wrap or waxed paper and roll into a log.  Freeze for at least 20 minutes.
  2. On preheated grill, cut corn cobs in half.  Brush with olive oil and grill.  Turn occasionally.  Once corn is charred, move to a less hot area of the grill.  Cook for approximately 12 to 15 minutes.
  3. Cut the chilled butter into small pieces and serve with the corn.

 

Grilled Cobbler

Ingredients:

  • 1 cup plus 1 tablespoon flour
  • ¼ cup plus 2 tablespoons sugar, plus more for sprinkling
  • 2 teaspoons baking powder
  • ½ cup buttermilk, at room temperature
  • 4 tablespoons unsalted butter, melted
  • 1½ pounds nectarines (3 to 4), sliced
  • 1 cup mixed berries
  • Vanilla ice cream, for serving

Instructions:

  1. Preheat grill.  Grease a medium cast-iron skillet.
  2. In a medium bowl, whisk together 1 cup flour, ¼ cup sugar and baking powder.  Mix in buttermilk and butter.
  3. In a separate medium bowl, mix nectarines, berries, rest of the flour (1 tablespoon) and  2 tablespoons of sugar.
  4. Spoon the fruit into the skillet.  Next, spoon the dough over the fruit in 8 spoonfuls.  Sprinkle with sugar.
  5. Cover with foil and grill until juices are bubbling and the top is golden brown.  This should be about 20 minutes.   Allow to cool for five minutes before serving.
  6. Serve with ice cream.
